With great pleasure to have some tea  with you and talk about  different sides of donuts.Laughing

In my eyes The most fascinating point in them is the hole.

It Seems useless at the first sight as uneatable but  it gives you food for thinking of  the mystery existing in our worldLaughing

Stop being stubborn .. Look through a doughnut ...
..make sense to children: ...

Sorry about, I often need such an explanation as I'm Hungarian and I know only that we are Martians, extraterrestrials but we don't know if we ever were children playing with doughnuts. Perhaps one (of us) called Petzval played a lot with two holed doughnut. :)

As for me, I prefer to have its middle and rich with apricot jam.

All of the holes must be filled up or sealed as they have their own aims to exist. For instance the whole of the lifebuoy targets your life and if you think carefully you will understand that how the holes are such on important nuances that the life depend on it. however it doesn't make sense why the hole of doughnut exists, it just pointless.

Do you know the Hungarian doughnut is without whole?

Hungarian donut / Farsangi Fánk

Makes 20-25 fank

2/3 cup milk
¼ cup water
¼ cup butter
¼ cup sugar
1 teaspoon salt
1 egg
3 cups flour, divided
2 ½ teaspoons dry yeast (1 packet)

In a microwave safe container, heat the milk, water, butter, sugar and salt until 120-130 degrees Fahrenheit.

In a separate bowl, mix together 1 ½ cups of the flour and the yeast.  Add the heated milk mixture and blend with an electric mixer on medium speed to moisten the flour and yeast.

Then, add the egg and beat on high speed with an electric mixer for 3 minutes.  Using a dough hook attachment or by hand with a wooden spoon, add the remaining flour.  Slightly more or slightly less flour may be used to get a dough that can be handled but is not too stiff.  The trick to making very light fank is not too much flour.  Turn out the dough onto a lightly floured board and knead for 1-2 minutes until dough springs back slightly.

Place dough in an oiled bowl and cover.  Allow dough to raise in a warm, draft free spot for 1 hour – until double in size.

Then roll our dough 3/8 inch thick on a lightly floured board.  Cut with a floured donut cutter or a drinking glass.  Cover and let rise on a board for 30-45 minutes or until slightly raised.

Heat 2-3 inches of oil in a deep fryer or heavy kettle to 375 degrees Fahrenheit.  As you place the donuts in the oil, slightly squeeze the center of the donut to create indentation.  Fry several donuts at a time for 2-3 minutes, turning as they rise to the surface until golden brown.  Remove from oil with slotted spoon and drain on wire rack.

Serve with apricot jam and sprinkled with powdered sugar.  Best served freshly made and still warm.

“Keep Your Eye Upon the Donut” (Optimist’s Creed)

The Mayflower coffee and donut shops (1930s-1970s) used this "Optimist's Creed" as its motto.

 * * *

'Twixt optimist and pessimist
The difference is droll;
The optimist the doughnut sees -
The pessimist the hole.

28 February 1999, New York Times, pg. CY2:
F.Y.I.
Eyes on the Doughnut

Q. Many years ago, after ice skating in Central Park, my parents would take my brother, my sister and me to a little coffee shop on the southeast corner of 59th Street and Fifth Avenue. On the wall were these words: As you ramble on through life, brother,/Whatever be your goal,/Keep your eye upon the doughnut,/And not upon the hole. Why?

A. You were in a Mayflower Doughnut shop, one of the last in the city, actually, and that bit of doggerel was the personal motto of the founder, Adolph Levitt. Known as the Optimist's Creed, the words were printed on each box of doughnuts sold in the Mayflower shops, where they were framed by two cartoon jesters, one frowning at a thin doughnut with a large hole, the other grinning at a plump one with almost no hole at all.

Mr. Levitt, an immigrant from Russia, first saw the anonymous verse in a picture frame he bought in a dime store, according to his granddaughter, Sally Levitt Seinberg.

Ohhh, if there's one thing I hang onto,
That gets me through the night.
I ain't gonna do what I don't want to,
I'm gonna live my life.
Shining like a diamond, rolling with the dice,
Standing on the ledge, I show the wind how to fly.
When the world gets in my face,
I say, Have A Nice Day.
Have A Nice Day.
Have A Nice Day.
Have A Nice Day.
Have A Nice Day.

When The world keeps trying, to drag me down,
I've gotta raise my hands, gonna stand my ground.
Well I say, Have A Nice Day.
Have A Nice Day
Have A Nice Day
