Product Information

Isomalt (also called palatinitol) is a sugar replacer derived exclusively from surose. It is manufactured in a two-stage process:first,sucrose is enzymatically transformed into isomaltulose.Second, the isomaltulose is hydrogenated to produce isomalt. In fact, isomalt is composed of 6-O-alpha-D-glucopyranosido-D-sorbitol (1,6-GPS) and 1-O-alpha-D-glucopyranosido-D-manitol dihydrate(1,1-GPM-dihydrate).
Therefore, isomalt, which contains 5% water of crystallisatain, is an odorless, white crystalline substance. It is available in a wide range of variants and particle size-from granulate to powder-to suit any application. The sweetness of isomalt is about half of sucrose. Its speciality,physiological function and edible safety has proved by experiments. And it was regarded as safe(GRAS) food ingredient by american FAD.
As an excellent replacer of sugar, isomalt is applied in a broad range such as candies, drink, chocolate, chewing gum, baked food, ice-cream, biscuit, pharmaceutical products.
