"ma'am" is the abbreviated version of "Madam" in English. I'll let someone else explain their answer to your question. ;o)

So Eva, Madam you use when you are talking to a woman that you dont know, and Mrs you use when you are talking to a married woman and the name of her family

Example: In a restaurant! the waiter says Here you are Madam! because he does not know the name
