When people ask, “How are you doing?”, isn’t the correct response “Pretty well.”?  I keep hearing people say, “Pretty good.”

I’ve also heard people say, “I’m doing good.”, but it kind of sounds like they’re using incorrect grammar on purpose so they don’t sound too stiff and formal.

You’re absolutely right: “Pretty well” is the grammatically correct answer, but, particularly in spoken English, you’ll often hear “Pretty good.” Saying “pretty well” is not as formal as saying, for example, “I’m quite well, kind sir,” but it’s still a bit more formal than “Pretty good.”
