Definition

to schmaltz something up means to make it kind of cheesy, to make it so nice and overly-emotional that it’s not fun or cutting edge anymore

This is one of those expressions which came from another language and has been added to American English. This term is actually Yiddish.
In Yiddish, it has a double meaning. It also means the ‘chicken fat’ used in cooking. We have a pretty large Jewish population in America, so terms like this are used in those communities and passed to people of other communities.
Because of all the different cultures that live here, American English is a mix of English and some other languages. Often, the terms we get are food related.
To schmaltz it up is a perfect example because it is a crossover term. It has both a literal meaning, ‘chicken fat,’ and an idiomatic meaning, ‘cheesy’ or ‘overly-emotional.’ These terms are used sometimes by famous people and then they become more common slang words to use.
