A person on a high horse is arrogant and refuses to make any compromises. He rides his ego like a great horse, looking down on others around him, thinking he is better than everybody else. A person on a high horse believes he deserves more than others.
In this example, Orlando Bloom is saying that he stopped thinking he was a better actor than others in Hollywood. After his role as Legolas in Lord of the Rings, Orlando Bloom thought that he was too good and too successful to act in less-serious movies. However, he is now off of his high horse and just wants to have fun and act, regardless of how much money he makes or how good the movie seems to critics.
